HM 456 - Advanced Food Planning & Preparation with Lab

Building upon the skills and knowledge acquired in Food Planning & Preparation, students will manage and operate the back-of-the house of the restaurant. Students will gain realistic planning, production, service and managerial experience.  Includes organization and operations of a commercial kitchen; the development and design of menus; management of back of house personnel; service standards; guest services, and marketing.
